MIXED FRUIT SHORT CAKE Tutorial

Learn how to make soft short cake decorated with fresh cream and fruits.

This week’s tutorial is a little different to what I normally do. I show you a recipe for a very light and soft vanilla sponge cake and simply decorate it with fresh cream and fruits. While not everything on this list is absolutely required, these are the things used in this tutorial video. Of course you are welcome to find alternative ways of doing things and we would love to hear if you've discovered an easier method or better tool to achieve good results. 1200g for 2 x 1" by 9" square

Whipping cream

1kg ( Approx )

Fresh Cream

1kg ( Approx )

Mix Fresh Fruit

Strawberry, blueberry, kiwi, etc.

Canned Fruit

Peach, pear

Ice Jelly Powder

1 Small Pocket from Asian grocery store

Light Lemon Syrup

150ml - To moisten the sponge

  • Thank you so much for your tutorials! Did you use Krem santi as mock cream/ Whipping cream which you mixed it with whipped fresh cream?

      Inside I use fresh cream and whipping cream mixture, outside whipping cream only. Fresh cream means real cream extracted from real raw milk. Whipping cream means different in different countries. Please check Wikipedia for more info. What I mean with whipping cream is a cream produced from more vegetable fats which has higher melting points than real butter and also added whitening and stabilizing components like gums e,t,c.
