In this tutorial, Serdar will show you how to create an entire centrepiece using nothing but piped elements. Specifically, he will focus on a Chinese brush painting style but of course, you can apply the technique to create many other styles. This centrepiece can also be used as a cake topper for a wedding or birthday cake. Serdar will demonstrate how to strategically assemble the centrepiece in order to maintain strength and stability. There’s also a cool trick that breaks the rules a little!

Hello Chef Serdar, I use Barry Callebaut couverture chocolate. Can I use this instead of compound chocolate?
Yes of course but you have to temper the couverture . Melt the couverture till 45 c degree and add finely grated couverture nibs till you get 31 c degree. Then you add few drops of alcohol to get the creamy texture.

In either this tutorial or another you mentioned a substitute for freeze spray which cannot be ordered and sent for abroad. Did you mean the spray that dentists use??

Hi Denise Yes I used the same chocolate for gluing but it is not necessary
