From simple sugar plaques to figurines, castles and a piped Eiffel Tower, one skill at a time.

Toppers are where a plain cake becomes a story, and they are the quickest way to lift your work above the ordinary. You will begin with small, confidence-building pieces: sugar picture frames, delicate sugar doves and a pair of easy stiletto shoes, all of which teach you how flat pastillage and paste pieces are cut, shaped, dried and handled without heartbreak. From there you step up to elegant intertwined initials for a wedding cake, learning how to design letters that suit a couple and stand upright safely, and then a sand castle topper with walls that wrap around a tiered cake.
The middle of the pathway moves into scenes and characters. You will model a stork and baby, then take on two full figurine projects, building heads, bodies, clothing, hands, shoes and hair for a comic bride and groom, and for Simon and Simone, a simple male and female pair set into three different scenes with a tree, bench, swing and garden furniture. Along the way you will pick up Serdar’s modelling paste, colour mixing, proportion and joining methods, plus his approach to eyes, eyebrows and expression.
The final stretch is architectural sugar work: a pastillage gazebo, a fairytale castle with towers and spires, a horse and carriage centrepiece, and an Eiffel Tower built from piped and assembled pastillage panels with accurate proportions. It suits hobby decorators who have coated a cake or two and want a reliable set of topper skills, and professionals after cleaner drying, gluing and assembly methods. By the end you will be able to make plaques, birds, lettering, whole sugar scenes, characterful figurines and showpiece structures to crown any celebration cake.
